Mealworm Fried Rice

Ingredients:

  • 1 cup cooked rice
  • 1 cup cooked mealworms
  • 1/2 cup diced carrots
  • 1/2 cup diced green onions
  • 1/2 cup diced celery
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced yellow bell pepper
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. In a large wok or frying pan, heat the vegetable oil over medium heat.
  2. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the carrots, green onions, celery, red and yellow bell peppers and cook until they are just tender, about 5 minutes.
  4. Stir in the cooked mealworms and cook for another 2 minutes.
  5. Add the cooked rice and continue to stir-fry for another 2 minutes.
  6. Season with the soy sauce, sesame oil, salt and pepper, to taste.
  7. Serve with fresh cilantro on top and enjoy your mealworm fried rice.
