Ant Pesto Pasta

Ingredients:

  • 2 cups fresh basil leaves
  • 1 cup toasted pine nuts
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 2-3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup cooked and pureed ants
  • 8 oz spaghetti or pasta of your choice
  • Additional Parmesan cheese, for serving

Instructions:

  1. In a food processor, pulse together the basil, pine nuts, Parmesan cheese, garlic, lemon juice, salt, and pepper.
  2. Slowly stream in the olive oil until a smooth sauce forms.
  3. Stir in the pureed ants until evenly combined.
  4. Cook the spaghetti or pasta of your choice according to package instructions, drain and return to pot.
  5. Toss the pasta with the ant pesto sauce until well coated.
  6. Serve with additional grated Parmesan cheese.
