Cricket Croquettes

Ingredients:

  • 2 cups cooked and mashed potatoes
  • 1 cup ground crickets

  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 egg, lightly beaten
  • 1/2 cup breadcrumbs
  • Oil for frying

Instructions:

  1. Heat the olive oil in a pan over medium heat.
  2. Add the onion and garlic and cook until softened.
  3. Add the ground crickets and cook until browned.
  4. In a bowl, mix the crickets with the mashed potatoes.
  5. Stir in the flour, basil, thyme, salt, and pepper.
  6. Form the mixture into patties or croquettes.
  7. Dip each croquette into the beaten egg, then coat with breadcrumbs.
  8. Heat the oil in a pan over medium-high heat and fry the croquettes until golden brown, about 2-3 minutes per side.
  9. Serve hot with your favorite dipping sauce.
