Ingredients:

  • 1 cup of dried moth larvae
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves of garlic, minced
  • 1 cup of sliced carrots
  • 1 cup of sliced mushrooms
  • 1 tablespoon of oil
  • Salt and pepper, to taste
  • Soy sauce, for serving
  • Rice or noodles, for serving (optional)

Instructions:

  1. Rehydrate the dried moth larvae in warm water for 10-15 minutes.
  2. Heat the oil in a large wok or frying pan over medium-high heat.
  3. Add the garlic, onions, and bell peppers to the pan and stir fry until they are slightly softened about 5 minutes.
  4. Add the carrots and mushrooms to the pan and continue to stir fry until they are cooked through, about another 5 minutes.
  5. Drain the moth larvae and add them to the pan.
  6. Stir fry until the larvae are hot and slightly crispy, about 2-3 minutes.
  7. Season with salt and pepper, to taste.
  8. Serve over rice or noodles, if desired, and drizzle with soy sauce.
